Ingredients:
- 1 cup besan (gram flour)
- 2 tablespoons mustard oil
- 1/2 teaspoon hing (asafoetida)
- 1 tablespoon jeera (cumin seeds)
- 5 medium-sized tomatoes, diced
- 4-5 green chillies, diced
- 1 teaspoon haldi (turmeric)
- 1 teaspoon lal mirch powder (red chilli powder)
- 1 teaspoon dhania powder (coriander powder)
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander for garnish
Instructions:
1. Roast 1 cup of besan in the iron kadhai until you catch a delightful aroma. Set aside.
2. Clean the kadhai and heat two tablespoons of mustard oil until it smokes.
3. Prepare the tadka by adding 1/2 teaspoon hing, one tablespoon jeera, diced tomatoes, and green chillies to the kadhai.
4. Once the tadka sizzles and tomatoes are stewed, add haldi, lal mirch powder, dhania powder, and garam masala. Stir well.
5. Add salt to taste and mix in the roasted besan. Combine thoroughly.
6. Gradually pour warm water to achieve the desired consistency.
7. Stir the contents well to prevent lumps and simmer on low flame for 7-8 minutes.
8. Garnish with fresh coriander before serving this delightful dish with rice.
